First thing: the size is still pissing me off.
I want big cinnamon rolls. The obscene kind. The kind where you look at it and have to make a decision about your afternoon. Right now they’re coming out smaller than I want because of how I’m cutting and rolling and I haven’t cracked it yet. Next batch I’m rolling first, then cutting, so I can actually see what I’m working with. We’ll get there.
I’m telling you this because we don’t do highlight reels here. The flavor is right. The texture is right. The size is currently a problem I am actively annoyed about. Moving on.
Classic Brown Sugar Cinnamon
This one had to work before anything else could work. It’s the whole point. If the classic is mediocre everything else is irrelevant.
It’s not mediocre. It’s full of actual cinnamon flavor — not a whisper of cinnamon, not cinnamon-adjacent, cinnamon. The dough is soft, the filling doesn’t disappear when you bake it, and it tastes like the thing it’s supposed to be without any “pretty good for gluten-free” asterisk attached.
This one is on the menu every single week. Non-negotiable.
Strawberry Cream
Classic dough, fresh strawberries in the filling, light glaze on top.
Fresh strawberries. Not extract, not jam, not strawberry flavoring from a bottle. Fresh. It keeps the whole thing from tipping into candy territory and gives it something real to actually taste like. The glaze is intentionally light because the strawberries don’t need help, they just need to not be buried.
This is a spring and summer roll. Fresh strawberries mean it’s seasonal and that’s exactly right.
Earl Grey
Okay I’m going to brag for a second.
The milk is infused with Earl Grey. The sugar is infused with Earl Grey. And then we took the leftover infused sugar from the filling and made it into powdered sugar for the glaze. So the Earl Grey flavor is in every single layer of this thing, not just one part of it.
It’s delicate without being fussy. It tastes like something someone actually thought about. I called it absolutely delightful out loud in my own kitchen and I stand by that.
This one is going on the permanent menu alongside the classic. I don’t make that call lightly.
What’s Next
Chocolate is up next, then cookies and cream. The flavor calendar keeps growing, which means I keep baking, which honestly isn’t the worst thing.
